Vegan Chocolate Salted Caramel Pancakes by Healthy Eating Jo

What you'll need:

  • 1/2 cup buckwheat flour
  • 1/2 cup almond coconut milk unsweetened
  • 2 Tbsp Damn Sugar cacao hot chocolate
  • 1/2 tsp bicarbonate soda
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp vanilla extract
  • 2 tsp granulated stevia
  • Pinch of salt

Salted Caramel Sauce

  • 1 Tbsp Tahini
  • 2 Tbsp Rice Malt Syrup (adjust to taste)
  • 1/8 tsp pink Himalayan salt

Method:

  1. Blend until smooth
  2. Cook in some coconut oil.
  3. Assemble. Topped with fresh fruit and some crushed pistachios

For the salted caramel sauce

  1. Mix well and pour over pancakes
